This recipe will make 10 muffins! Feel free to double the ingredients, I even tripled the amount because I like to live dangerously.
What You’ll Need:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
2 large bowls
1 small bowl
1 mixing spoon
1 muffin baking tin
1 fork or toothpick
Preheat your oven to 375 degrees.
Mix all of the first section of ingredients in a large bowl.
Mix all of the ingredients of the second section in another large bowl.
Mix all of the third section together in a small bowl.
Slowly fold the banana bowl into the dry ingredients in the large bowl. Do this until the mixture is has combined into a moist batter.
Divide the dough into the muffin tins evenly. You will then sprinkle the brown sugar bowl’s contents in top of the muffins. You will want to cover each muffin with this mixture. This will give your muffins the crackled top you can see in my picture.
Place your muffins into the oven and bake for 18-20 minutes. Check to make sure the muffins are fully cooked by sticking a fork or toothpick in the center muffin. If there is no muffin residue on your fork or toothpick, your muffins are done!
